Crispy Baked Potatoes Recipe

What is the secret to a great tasting crispy baked potatoes recipe? First, making sure that you season your potato for great flavor. Secondly, use tiny potatoes or cut your larger potatoes into smaller 1-inch pieces. Next, spread the potatoes out in a single layer on a baking sheet. Finally, Roast the potatoes at a slightly higher oven heat. The outside will be crispy with a tender and delicious inside.

Another method that works nice is to par-boil the potatoes, then season and bake them. They will bake faster and the outside will crisp up nicely.

Easy Roasted Potatoes

Ingredients

  • 2 Lbs. Red or Yellow Skinned Potatoes Today, I used baby potatoes
  • 2 Tbl. olive oil
  • 1 Tsp. garlic powder
  • 2 Tbl. dried parsley
  • 1 Tsp. salt
  • 1/4 Tsp. pepper
  • 1/2 Tsp. Paprika Optional

Instructions

  • Preheat oven to 425 degrees Fahrenheit.

  • Wash and scrub the potatoes. Cut into 1-2 inch pieces.

    2 Lbs. Red or Yellow Skinned Potatoes

  • In a large bowl, toss the potatoes with the oil, garlic powder, parsley, salt, pepper, and paprika if using.

    2 Tbl. olive oil, 1 Tsp. garlic powder, 2 Tbl. dried parsley, 1 Tsp. salt, 1/4 Tsp. pepper, 1/2 Tsp. Paprika

  • Place on a baking sheet and bake for 30-35 minutes until browned and tender.

What Kind of Potatoes to Use for Roasted Potatoes?

This recipes shows how I am using baby potatoes for roasting. To be completely honest, you can use ANY kind of potato. I have made roasted red potatoes, russet potatoes, Yukon gold potatoes, and even roasted sweet potatoes.

They’re all great!

Another delicious option is to turn this into sheet pan potatoes and veggies Or just a sheet pan filled with simple roasted potatoes and green beans.

Do Potatoes Need to be Peeled Before Roasting?

While you can peel potatoes before roasting, you definitely do not need to peel them. I personally love the flavor the skin from russet or Idaho potatoes add and I love the look and color of red skin potatoes too. Normally, if a potato has a thin and relatively blemish-free skin, I will leave the skins on. When the potatoes have a thick skin or a lot of blemishes, I will generally peel for this recipe.

Cut the Potatoes Equal Size

If you’re using small potatoes, you can cut them in half or if they’re tiny, you can just give them a little poke with a fork or knife to allow the steam to escape. When using larger potatoes, I like to cut them up into about 1-2 inch pieces. This will help with allowing the steam to escape and the potatoes to roast evenly.

How Long to Roast Mini Potatoes

Here is a handy chart for how long to roast mini potatoes based on the oven temperature. The cooking times can also be used for potatoes cut into smaller pieces.

Temperature to Roasting Time for Potatoes

Generally, I use 425°F or 450°F for roasting potatoes. I love how it makes crispy potatoes on the outside and they start to turn golden brown on the edges. However, you can cook potatoes at a lower temp if needed (but you may need a longer baking time).

For Best Results Use The following cook times are for one-inch potato cubes:

  • 350°F for 45-50 minutes.
  • 375°F for 35-40 minutes.
  • 400°F for 30-35 minutes.
  • 450°F for 20-25 minutes.

I like to use half sheet baking pans for roasting in the oven. Here are a few of my favorite kitchen items.

You Can Freeze Roast Potatoes

Potatoes are not something you would think of freezing. They actually freeze well! Place them in a freezer bag, or airtight container and freeze. They will stay fresh for up to four months.

When you are ready to enjoy, reheat either in the oven or in a frying pan on the stove with a little bit of butter.

I like putting butter on my potatoes for eating. It is just that last bit of deliciousness that sends these over the top for me. Such an easy recipe.

Fresh Versus Garlic Powder

You will notice in this recipe that I have used powdered garlic, not fresh. I find that when I am oven roasting vegetables and have used fresh garlic, it has a tendency to burn. Therefore, I use powder garlic and achieve the wonderful garlicky taste without worrying about burning.
