Keto Cowboy Cookies are low carb, delicious, and perfect for anyone on the keto diet. They're the best way to curb a sweet tooth without the worry of packing on any guilt. These are some of my favorite treats because they make truly delicious cookies for the whole family to enjoy.

Once I made this new recipe, I knew it was a winner. It might be one of my best keto chocolate chip cookies out there, but you'll have to try it, and let me know what you think. I love the chewy texture paired with shredded coconut because it creates one of the best results in cookie form. There's nothing like a homemade cookie that has a great texture and a great taste!

Forget about trying to find anything like this at the local grocery store. A whole batch of these cookies is quick and easy to make and seriously are the best keto cookies out there. No one will believe that this tasty recipe is low carb and gluten-free!

Ingredients

Butter - I typically use unsalted butter for this recipe, but either will work.

Joy Filled Eats Sweetener - This is my go-to sweetener for my keto recipes.

Molasses - This helps to add a darker coloring and a warm flavor to these cookies. See my thoughts on molasses in keto recipes in the Common Questions.

Egg - The binding agent to help hold the wet ingredients and dry ingredients together.

Vanilla extract - For flavor. Adding vanilla enhances the other flavors.

Almond flour - Added for texture. Almond flour is used often in keto desserts. It is mild in flavor and works well in many recipes.

Baking soda - To help the cookies have a nice chew.

Gluten-free oats - Gives texture. If you don't need these to be gluten-free you can use regular old-fashioned oats.

Sugar-free chocolate chips - Adds sweetness. Semisweet chocolate, milk chocolate, and dark chocolate chips can be used interchangeably.

Chopped pecans - Adds a nice crunch and texture. For added flavor roast them first. I roast nuts at 400 for 6-8 minutes. Watch them carefully so they don't burn.

Unsweetened coconut flakes - Gives an added chew and great flavor. You want large flakes for these cookies.

How To Make Keto Cowboy Cookies

Step One: Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.

Step Two: Cream the sweetener and butter together in a large mixing bowl. Add the egg, and molasses, and mix well.

Step Three: Add the almond flour and baking soda. Mix in the dry ingredients just until combined.

Step Four: Stir in the chocolate chips, oats, pecans, and coconut.

Step Five: Make 24 cookies and add them to 2 prepared baking sheets. Put the pans in the oven and bake for 12 minutes.

Expert Tip: I tested pressing them down but it wasn't necessary so don't bother. They spread out on their own. If you want cookies that spread less chill the dough first.

Step Six: Finally, cool the cookies on the trays completely and then move them to a storage container.

Variations

Use another type chocolate - The fun thing about making these golden brown treats is that you can change the type of chocolate that is used. Keep with the sugar-free theme, and this original recipe is easy to alter. You can use white chocolate or dark chocolate.

Add ground cinnamon - Any big cookie fan will agree that adding cinnamon is a great way to easily add more warmth to this cookie recipe. Small cookies or big cookies - it doesn't matter because adding cinnamon makes either taste divine.

Sub coconut sugar - While this will change the net carbs, you can sub coconut sugar for my sweetener if you prefer.

Common Questions

Is molasses keto?

No. However, I use it for flavor, not sweetness. Adding a teaspoon of molasses to this keto cowboy cookies recipe with 24 servings adds a very negligible amount of carbs. Alternatively, you can use a brown sugar sweetener.

How do I make uniform cookies?

If you want small cookies, use a small cookie scoop to scoop out the cookie dough. This will keep the amount of dough that is scooped out similar in size, meaning that the cookies that are baked will be similar in size as well.

​How do I keep cookies from sticking to the baking sheet?

​Most cookie recipes will require that the cookie sheet be prepped with either parchment paper, coconut oil, or nonstick cooking spray. This will ensure that none of this great recipe will be wasted by sticking to the baking sheet.

What is the best rack in the oven for baking cookies?

Unless recipes tell me differently, I like to place the cookies on the middle racks of the oven. This ensures that the top of the cookies and the bottom of the cookies bake at the same timeframe.

Be sure to pay close attention to the total time to bake listed on the recipe card so that you don't overbake these cookies. They should be golden brown in color, but if you overbake them, they will lose some of that chew that is expected and craved.

Does this cookie taste like a regular chocolate chip cookie?

Due to the key ingredients, there is a hint of chocolate chip cookies in it, but the texture of the added oats and coconut makes it a whole other type of cookie.

  • Preheat oven to 350.

  • Cream together the butter and sweetener in a large bowl. Add in molasses, eggs, and vanilla and mix well.

  • Add the almond flour and baking soda.

  • Stir in the oats, chocolate chips, pecans, andcoconut.

  • Form 24 cookies on 2 parchment-lined cookie sheets. Bake for 12 minutes.

  • They will be soft but golden around the edges. Cool completely on the trays before transferring to a storage container.

Notes

Nutrition: the nutrition facts are for 1 cookie. Each serving has 3 NET carbs.

Prep Time: put the cookie dough into the fridge up to overnight before baking the cookies. You will need to let it come up to room temperature before you scoop the cookies. Alternatively, you can scoop the dough first and then refrigerate the balls.

To Store: keep the low carb cowboy cookies in an airtight container at room temperature or in the refrigerator for up to 4 days.

To Freeze: flash freeze the cookies first, then put them into a container or freezer bag. Store for up to 3 months.

Notes on Sweeteners:

I use my ownblend of xylitol, erythritol, and steviain my recipes. This is twice as sweet as sugar. It is comparable toTrim Healthy Mama Gentle SweetandTruvia.

To sub inSwerveorLakanto Monk Fruituse 1.5 times the amount of sweetener called for.

To sub inPyureorTrim Healthy Mama Super Sweetuse half the amount of sweetener called for.

Substitutions will work in most recipes. They may not work in candies, such as caramel.
