  • I made your Italian wedding soup recipe, with a few minor riffs (I only had ground pork so did not used beef in the meatballs, and I added lacinato kale and spinach as greens to approximate escarole, which has been very scarce in these parts lately, but I love the flavor). Your idea to combine chicken and beef broths and wine is genius — It results in a deeply flavorful stock, approximating the flavor of a long-simmered homemade stock. It lasted several days in our house, and just got better the longer it sat in the fridge.

    I adore your recipes. The pecan shortbread bars are a Thanksgiving and Christmas staple.

  • I’m a seasoned home cook for many years. I am 82. Love, love your recipes-more than any of the “famous chefs” on TV or online. Just a question, why not recommend escarole in lieu of
    spinach in your Italian Wedding Soup. I know the greens are interchangeable, but I have always made this with escarole. Just wondering. Keep up the good work. You are a fantastic chef!!
